I LEARNT THIS DISH FROM MY MOTHER AND HAVE NEVER TASTED A BETTER PRAWNS DISH IN MY LIFE.

King Prawns (without shell) - 500 g
Eggs - 6 (medium)
Onions - 2 (medium)
Garlic - 3 cloves
Green chillies - 2
Salt - to taste
Lime juice - to taste
Pure chillie powder - to taste
Turmeric powder - a pinch
Curry leaves - a few
Pure Ghee - 2 teaspoon
Oil - to deep fry the prawns

Wash the prawns and drain excess water in a strainer. Place the prawns in a bowl and add salt, chillie powder, turmeric powder and lime juice and mix thoroughly. Leave the mixture to marinate for 20 to 30 minutes.

Dice the onion and crush the garlic. cut open the green chillies lengthwise.

Heat a deep pan or pot in low flame and add oil. When the oil is hot add the ghee. Once the ghee has melted in the oil add the prawn mixture and stir it well. The oil level should just cover the prawns. Make sure not to burn the prawns and use only low to medium flame. Once the prawns has turned pink add chopped onions, crushed garlic, green chillies and curry leaves.

Once the onions have softened add all 6 eggs to and mix thoroughly till lumps of egg have formed. Taste the mixture for salt. If not enough you can always add more. Make sure the eggs are thoroughly cooked before you turn off the flame.

Turn off the flame and leave it to cool down for a few minutes. Use a strainer to drain all the oil. Be patient to remove maximum oil. Throw away the oil and DO NOT reuse.
Now the delicious SPICY EGG PRAWNS is ready.

Tastes very good hot or cold. Can be accompanied with plain rice or string hoppers. Also perfect with bread, dhosa, pittu. This dish can be high in fat as plenty of oil is used. Therefore make this dish very occasionally and I am sure your family will enjoy it.
