Stuffed Green Chillies
Serves 2 as a snack 4 long plump green chillies Boil potatoes and mash roughly. Dry fry mince and chopped onion then add mashed potato, mix together, season with salt, black pepper and chili powder. Let mixture cool. Slit green chillies right down the front and remove seeds, fill with potato mixture and spear with cocktail sticks to secure filling, deep fry till chillies have browned slightly and potato filling turns brown and crispy in appearance. Drain on kitchen paper and serve sprinkled with a little sea salt, enjoy with a cold beer or nice glass of wine.
