Baked Fish
500g firm white fish filletted Pre-heat oven at 220 degrees celsius. Place tomato, garlic, chilli and lemon grass at the bottom of a medium sized oven-proof dish and layer the fish on top. Mix the oil, fish sauce, balsamic vinegar and soy sauce separately and pour over the fish. Bake for 30 minutes turning the fish once. To serve place the fish fillets on a plate and spoon the sauce over the fish. Delicious with rice sticks or green chinese noodles. A great recipe for busy cooks!
