ingredients... 4 table spoon cooking oil 4 table spoon diced tomato(peeled and deseeded) 2 table spoon toasted pinenuts 2 table spoon coriander leaves 2 table spoon fresh lemon juice 1table spoon fresh chillie flakes half tabel spoon black pepper 300 grams whiting fillets method....... In a saucepan , heat thecooking oil until warm,Add in the tomato,pinenuts,lemon juice.fresh chilllie,salt and pepper heat a frying pan and cook the whiting on one side untill golden,then mix coriander.then flip over and cook for a further minute.place the fish on a serving plate and spoon the tomato over the fish. serves 2 people
