Ingredients:
1Kg. skinned and defatted chicken parts
5 cloves garlic, crushed
2 tablespoons honey
1/2 cup soy sauce
1teasp. pepper
small stick of lemon grass, chopped into 1 centimetre pieces
salt to tasteDressing:
two light green peppers(sri lankan style maalu miris), sliced
1 medium sized onion, sliced length-wise
1 medium sized tomato, cubed.
1/2 cup cadju
Method:
Mix th soy sauce, honey, pepper, garlic,salt and brush over the chicken. Leave in the fridge for two hours, tastier if could be kept over night. Then, lay the pieces of chicken in an oven proof dish, place the lemon grass over, and grill under a hot grill until the honey coating turns golden brown.
Check whether the meat is done, by sticking a skewer into the meat. The juice coming out should be clear. Turn the pieces, and grill again. Once the meat is done, combine the dressing and mix in, grill for another ten minutes.
Serve hot.
