Cut all the vegetables into small cubes. Put a little vegetable oil into the pan and add all the vegetables, onion, ginger, garlic, (green peas if you like). Add a little salt, coriander powder, soy sauce. Mix well Add little water (1 cup), close the pan and let it cook under low flame for about 20 mins or till all the vegetables are boiled nicely. Adjust the water level to your liking, more water if you want a curry, less if you don't. It's much better with less water. The quantities of vegetables usually goes to 1:1 ratio, it's good even without onions.
