Banana Fritters (Sweet)
150g white flour 1 small sized egg 2 tablespoons sugar 1/4 cup thick coconut milk 1/2 teaspoon salt 1/4 teaspoon baking soda Water Some Kitul honey (optional) Oil for deep frying In a bowl put in the flour, milk, sugar, salt, baking soda and the egg (beaten well) mix to form a thick batter, using a little water. Leave the mixture covered for about half an hour. Cut the bananas lengthwise (4" long), dip in the above mixture and carefully put it into the very hot oil for frying.
