Serves: 8-10 2 cups mixed dried fruit 3 oz candied cherries, cut into quarters 1 1/2 oz candied apricots, chopped 1 1/2 oz candied pineapple, chopped 2 teaspoons finely chopped candied ginger 2 teaspoons grated orange rind 2 tablespoons Grand Marnier 1 tablespoon brandy 1 gallon vanilla ice cream, softened 1/4 cup chocolate chips 1/2 cup chopped pecans Chocolate Sauce 1/2 cup water 1/4 cup unsweetened cocoa powder, sifted 1/4 cup butter 2 tablespoons soft brown sugar 3 1/2 oz dark (semisweet) chocolate, chopped 1 tablespoon brandy
1. Mix fruits, rind, liqueur and brandy in a large mixing bowl. Set aside for 20 minutes, uncovered; stir occasionally. 2. Using a metal spoon, break up the ice cream in a large mixing bowl. Add the fruit mixture, chocolate chips and nuts to ice cream; stir until well mixed. 3. Line a 9 cup capacity bowl with plastic wrap. Spoon in ice cream mixture; smooth surface. Cover with plastic wrap; freeze overnight. To serve unmold and cut into wedges. Serve with chocolate sauce. 4. To make Chocolate Sauce: Place water, Cocoa, butter and sugar in small pan. Stir over low heat 4 minutes or until mixture boils ans sugar is dissolved. Remove from heat; add chocolate. Stir until chocolate has melted and mixture is smooth; stir in brandy.
