1. 1/2 cup granulated sugar 2. 4 large oranges 3. 5 tbs water
Method
Place the sugar in a heavy based pan with 3 tablespoons water. Allow to dissolve over a low heat then boil gently without stirring until the syrup turns golden.Remove thin strips of peel from the orange avoiding the bitter white pith from the oranges, retaining any juice, and place whole into a serving dish.
Once syrup has turend golden, pluge the pan into a sink of cold water to arrest the process and prevent burning. Quickly add the peel, water and juice to the syrup which will bubble furiously. Stir gently until blended, then pour over the oranges.Chill until ready to serve.
