100 ml Cream 100 ml Milk 25 g sugar 2 Kaffir Lime leaves 2 1 leaf gelatin 50 g blackberry fresh or frozen
Cut the lime leaves into a fine long strip (julienne) Place all ingredients except gelatin and berries in a pot and stir whilst bringing to the boil. (Note: mix well all the ingredients before it boils) Allow to sit for 10-15minutes before adding the soaked gelatin. (Do not let milk completely cool, it needs to be warm for the gelatin to dissolve) Soak gelatin in cold water until it becomes soft and slimy, strain off water and add to warm milk mix. Mix it using spoon to completely dissolve the gelatin. Allow to cool to room temperature 10min before placing into glasses (suitable glass - Martini) Apply bit of nut oil to the glasses before pouring the mixture; (it easy to remove from glass to serve) Pour the mixture into the glasses and put the blackberries half cut into glasses; Refrigerate until set (3-4 hours)
