Enough oil for deep frying 100g self-raising flour 1 tbsp baking soda 2 eggs 2 drops of banana essence splash of iced sparkling water (or you can use soda Water) 2 very ripe bananas, sliced on the diagonal
For the sauce: 100g sugar 100ml double cream 50g butter 1 table spoon of vanilla 50g roasted Cashew nuts, crushed (optional)
Heat the oil in a large saucepan ready for deep frying. Mix together the flour, baking soda, eggs and sparkling water to make a batter. Add the drops of banana essence at the end and give a final stir. Dip in the slices of banana to coat, then fry in the hot oil for 2-3 minutes or until crisp and golden. Drain the excess oil on kitchen paper towel.
For the sauce, caramelize the sugar by heating it gently in a hot pan until it turns golden. Once it's golden brown, add the cream and butter and bring to the boil. Let it reduce for a minute or two in medium heat then add the roasted cashew nuts. Pour over the bananas fritters and serve hot.
This is a great option for left over bananas in your fruit basket. Even the ones with black spots on the skin.
