KOKOO'S BUTTERSCOTCH PUDDING
3 tsp HOT WATER 1 cup BROWN SUGAR 4 dtsp BUTTER 3/4 pt HOT MILK 3 no's EGGS PINCH OF SALT VANILLA TO TASTE METHOD:-HEAT BUTTER AND SUGAR AND A LITTLE WATER TO A CARAMEL ADD HOT MILK AND SALT. POUR OVER BEATEN EGG YOLKS. RETURN TO FIRE, COOK UNTILL SMOOTH. ADD GELATINE DISSOLVED IN HOT WATER, FLAVOUR WITH VANILLA TO TASTE. FOLD STIFFLY BEATEN EGG WHITES THROUGH THE MIXTURE. PLACE IN A MOULD AND KEEP IT IN THE REFRIGERATOR FOR 1/12 hrs. DECORATE WITH MERINGUE NOSSLES & A FRUIT OF U'RE CHOICE.
