3 oz. flour 1. Beat the butter and sugar to a cream, add the eggs, beating them well in. Then gradually mix in the flour. Beat well. Add the milk and beat again. The mixture should be of the cosistency of a thick batter that will just drop from the spoon. 2. Lastly, mix the flavouring, salt, and the baking powder. 3. Butter a pudding basin, put the jam at the bottom, and pour the batter gently over it; cover with a piece of buttered paper and steam for one hour. 4. Turn out carefully and serve at once. How to steam a pudding: Put the pudding mixture into a mould (it should not fill more than three-quarters) and cover the top of the mould with a piece of greased paper. Then set it in a saucepan and keep the water at simmering point until the puding is cooked. If the water boils away more boiling water must be added. |
