1. 1/2 lb cadjunuts
2. 5 eggs
3. 1/2 lb sugar
4. 6 ozs butter
5. 3 ozs rusks, rind of an orange
6. 1/2 orange juice
7. 1/2 wine glass portwine
8. 1/2 tsp nutmeg Method
Powder sugar,add yolks and mix well.Add
butter.pour boiling water on cadjunuts
and skin.Grind finely.Boil rind and grind.
Add orange juice to mixture and add cadjus
and nutmeg.Then add rind,portwine and
rusks.Lartely beat stiffly 21/2 whites
of eggs and fold into mixture.
Pastry
1. 1/2 lb flour
2. 2 yolks of eggs
3. 1 desertspoon full powdered sugar
4. pinch of salt
5. 1/4 lb butter
Method
Mixed with water to form pastry.Roll out and
line small cake tins,fill with lemon mixture
and bake in a hot oven.
